Cook's tip

A ripe avocado gives slightly when pressed with a finger. Cook the salmon all the way through so it doesn't taste fishy once cold. For a mild version, skip the sriracha and stir a little honey into the mayo.

Cooking it at camp

Glaze the salmon at home, cool it and bring it in the cooler; slice the avocado and cucumber on site and roll straight away. Cut avocado browns quickly, so eat the rolls as soon as they're made.
