Kimchi Jjigae Cheesy Crispy Fried Rice
Everything you love in kimchi stew, pork, tofu and kimchi, turned into a one-pan fried rice with a crackling crust underneath and stretchy cheese on top.
Method
Chop the pork belly and kimchi into 1 cm pieces. Cut the tofu into 1.5 cm cubes and pat them very dry with kitchen paper. Slice the spring onion and break up any clumps in the cold rice with your hands.
Heat half the oil in a 24 cm pan, spread out the tofu and fry over medium-high heat for , turning, until at least two sides are golden and crisp. Set aside.

medium-high heatAdd the rest of the oil and the pork to the same pan and cook over medium heat for , until the fat runs out and the edges are golden.

medium heatAdd the kimchi, sugar and chili flakes and fry over medium heat for until the kimchi turns translucent, then stir in the kimchi juice and soy sauce until the liquid has almost gone.

medium heatFry no more than 2 servings in one pan or the rice will steam and turn mushy; for larger amounts, set some of the kimchi mixture aside and work in 1 batch(es). Add the rice and fry over medium-high heat for , pressing out clumps with a spatula, until every grain is red and steaming hot. Fold the tofu back in.

medium-high heatPress the rice flat across the pan and drizzle the sesame oil around the edge. Scatter over the mozzarella, cover and leave over medium-low heat for : you will hear crackling as a crust forms underneath and the cheese melts. Repeat in 1 batch(es), as before.

medium-low heatIn another 20 cm pan with a little oil, fry the eggs over medium heat for , until the whites are set and the yolks still runny. Slide them onto the rice, scatter with spring onion and sesame seeds and serve straight from the pan.

Cook's tip
Freshly cooked rice turns gummy; rice chilled overnight works best. The crust is ready when you lift an edge with the spatula and the bottom is deep brown.
Cooking it at camp
A heavy cast-iron pan gives the best crust. Cook the rice the day before and keep it in the cooler. Camp burners heat unevenly, so rotate the pan now and then while the crust forms.
