Kimchi Jjigae (Kimchi Stew)

Korea's classic home-style stew, made by frying well-fermented kimchi with pork and then simmering it.

Method

  1. Heat the oil in a 18 cm pot and fry the pork over medium heat for until the outside turns white.

  2. Add the kimchi, cut into bite-size pieces, and the sugar. Fry over medium heat for another until the kimchi turns translucent.

Cook's tip

If your kimchi is not very sour yet, add 1 tsp of vinegar for tang. Canned tuna works well instead of pork.

Cooking it at camp

You only need one burner and one pot. Wind can add 3 to 5 minutes to the cooking time, so set up a windscreen.
