Lagman Ragù Pappardelle (Uzbek x Italian)
An Uzbek-spiced beef and vegetable ragù with cumin, coriander and paprika, tossed through wide Italian pappardelle and finished with Parmigiano and dill.
Method
Finely chop the onion, garlic and carrot, and cut the pepper into 1 cm pieces. As in lagman, a little bite from the vegetables is part of this ragù's charm.
Heat the olive oil in a 24 cm wide pan over medium-high heat, add the beef, spread it out and leave it for 1 minute. Break it up with a spatula and fry for , until no pink remains and brown bits form on the bottom; those bits give depth.

Cook's tip
Minced lamb brings it closer to the original lagman. Coriander leaves work in place of dill. A spoonful of Greek yoghurt on the side is a fresh match for the warm cumin.
Cooking it at camp
Make the ragù at home and pack it airtight; at the campsite just boil the pasta and toss it with the reheated sauce. To save water, use short pasta in a smaller pot.
