Uzbek Lagman (Beef and Vegetable Noodle Stew)
Cumin-scented beef stewed with radish, peppers and tomato into a rich, brothy sauce ladled over chewy thick wheat noodles: Uzbekistan's beloved noodle dish.
Method
Cut the meat (leave a little fat on) into strips 1 cm thick and 4 cm long and pat dry with paper towel. Slice the onion thickly and the garlic thinly. Dice the carrot, radish, pepper and potato into 1 cm cubes, chop the tomatoes roughly and cut the cabbage into 2 cm pieces. Same-size vegetables cook evenly.
Heat the oil in a 22 cm heavy pot or wok over high heat until it barely smokes. Add the meat, leave it alone for the first minute, then stir-fry for in total until browned and all the juices have evaporated. If the heat is too low, the meat stews and turns tough.

Cook's tip
Uzbek families hand-pull their noodles, but fresh udon or thick fresh wheat noodles make it easy for beginners. Chuck or shin works well for beef; lamb is closer to the original. Use less water and reduce the sauce for 'quruq lagman', a thicker version tossed with the noodles.
Cooking it at camp
At camp use two burners (one for the sauce, one for the noodles) or cook the sauce first in a big cast-iron pot and the noodles afterwards. Cutting the meat and vegetables at home speeds things up a lot.
