Cook's tip
Chuck or shin are ideal: their connective tissue melts in the oven into a glossy gravy, while lean cuts go dry. Browning the vegetables separately keeps them as neat, flavourful cubes instead of mush. Make it a day ahead; the flavour deepens.
Cooking it at camp
Braise the meat at home and freeze it flat in a bag. At camp, reheat it in a heavy pot over the fire or burner, add the root vegetables (browned in a pan first if you like), cover and simmer until tender, then finish with butter browned in a small pan.
