Turkish Delight and Pistachio Lolly Cake (Turkish × NZ)
The Kiwi lolly cake made with jewel-like cubes of rose Turkish delight instead of lollies, a little cardamom and orange zest, and a pistachio-coconut coat.

Cook's tip
Turkish delight is stickier than fruit lollies: oiling the scissors and dusting the cubes with their own powder stops them clumping. For a stronger rose note, add a few drops of rose water with the condensed milk, tasting as you go, as it's potent.
Cooking it at camp
Make it at home and carry it wrapped in the cooler. In a humid tent, Turkish delight weeps a little, so keep the log sealed until you slice it.
