Cook's tip

The lemon zest doesn't make it taste of lemon; it simply cuts the sweetness. White chocolate scorches easily, so stop microwaving while a few lumps remain and let the heat finish them. Pressing hard in the tin is what gives clean-edged bars.

Cooking it at camp

Make it at home and carry the slab whole, wrapped, in the cooler; cut bars at the campsite. Skip the drizzle in hot weather, as white chocolate softens fast.
