Chorizo and Jalapeño Queso Mac
Tex-Mex mac and cheese: the roux is cooked in red chorizo fat, Monterey Jack melts into a queso-style sauce, and jalapeño, lime and cilantro keep it bright.
Method
Grate and mix the two cheeses. Seed the jalapeños and remove the white ribs (leave them in if you like heat), then chop into 5 mm pieces. Squeeze fresh chorizo out of its casing and crumble it, or cut cured chorizo into 5 mm dice. Chop the cilantro and roughly crush the tortilla chips by hand.
Put the water in a 20 cm pot, cover and bring to a boil over high heat, about . Add the salt and macaroni and cook 1 minute less than the packet time, about . Save a mug of pasta water and drain.

high heatCook the chorizo in a 20 cm deep frying pan (or pot) over medium heat for , until it releases red fat and the edges crisp. Add the jalapeño and cook more, then lift the solids out onto a plate, leaving the red fat in the pan (if there is a lot, keep about 1 tsp per serving).

medium heatLower the heat to medium-low heat, add the butter to the fat and melt it, then whisk in the flour, cumin and chili powder for , until fragrant and the roux turns orange.

medium-low heatWhisk in a third of the milk until smooth, then add the rest little by little. Raise to medium heat and stir for , scraping the bottom, until thick enough to coat the back of a spoon.

Cook's tip
No Monterey Jack? Half mozzarella and half cheddar melts just as smoothly. Chorizo is salty, so taste before adding any salt. Wash your hands after handling jalapeños and don't touch your eyes.
Cooking it at camp
Prep the cheese, jalapeños and chorizo at home and keep them in the cooler. At camp, use one pot: boil the pasta first and set it aside, then cook the chorizo and the sauce in the same pot.
