Gruyère and Aged Cheddar Mac with Crispy Panko
Restaurant-style mac: a béchamel built on milk infused with onion and bay, melted aged cheddar and Gruyère, and a crunchy buttered Parmesan panko topping.
Method
Pour the milk into a 16 cm saucepan, add the onion chunk studded with the cloves and the bay leaves, and warm over medium-low heat for . When small bubbles form at the edge and it steams (do not boil), turn off the heat, cover and infuse for . Lift out the onion and bay.

Pour the water into a 20 cm pot, cover and bring to a boil over high heat, about . Using less water than usual gives you starchier pasta water. Add the salt and pasta and cook, stirring often, 2 minutes less than the packet time, about . Save a mug of the pasta water and drain.

Cook's tip
Infusing the milk is a classic béchamel technique that adds quiet depth; skip it if you're short of time. Undercooking the pasta by 2 minutes lets it finish in the sauce, absorbing flavour without going soft. Add the panko at the last moment so it stays crunchy.
Cooking it at camp
Toast the panko topping at home and pack it airtight, and grate the cheese into a zip bag. At camp, skip the milk infusion and use one pot: pasta first, then the sauce.
