Cook's tip
Drying the sweet potatoes thoroughly and coating them thinly in cornflour is what makes them crisp. In an air fryer, cook at 200 °C for 15 to 18 minutes, shaking halfway. The dip thickens as it cools; rewarm it or add a little water. Never serve it to anyone with a peanut allergy.
Cooking it at camp
Instead of an oven, cook the sweet potatoes in a cast-iron pan on the grill with a good glug of oil for 15 to 20 minutes, turning them. Make the dip at home and rewarm it on the burner.
