Cook's tip

Coils frozen from the classic malawach recipe work exactly the same way (cook them a little longer). Zhug or sriracha are good swaps for the harissa.

Cooking it at camp

A perfect camp breakfast: frozen malawach can half-thaw in the cooler without harm, and one burner and one pan are all you need. Wind weakens the flame, so use a windshield and make sure the egg is fully set.
