Cook's tip

The infusion is where the flavour comes from: crack the cardamom so it releases its aroma, but do not steep longer than 20–30 minutes or it turns bitter. Do not skip the egg-white seal. Keep refrigerated and eat within 2–3 days.

Cooking it at camp

Make it at home and carry it in its tin inside a lidded box in a well-iced cooler. Dust with cinnamon at camp just before serving and eat it on the first day.
