Cook's tip

If the custard turns lumpy, whisk hard or push it through a sieve straight away and it will be smooth again. Bake the case until the base is golden so it stays crisp under the filling. Serve cold or at room temperature, the South African way; keep refrigerated and eat within 2–3 days.

Cooking it at camp

Make it at home and carry it in its tin inside a lidded box in a well-iced cooler. It is a custard, so keep it cold and eat it on the first day.
