Cook's tip

The water bath keeps them moist like steamed moi moi and stops the edges drying. A silicone muffin tin makes them much easier to turn out. Freeze leftovers and microwave for 1 minute for an easy breakfast.

Cooking it at camp

Bake them at home, cool and pack in a sealed tub for a ready-made camp breakfast. To make them on site, put a little water in a lidded cast-iron Dutch oven, stand small cups in it and steam-bake on low for about 30 minutes, with embers on the lid to melt the cheese.
