Cook's tip

Doubling up the corn tortillas stops them tearing. Greek yogurt instead of sour cream brings it closer to Lebanon. The lentil filling keeps for 3 days in the fridge, so make it ahead for a 10-minute dinner.

Cooking it at camp

Cook the lentils at home and it takes 15 minutes on one burner. Warm the tortillas straight on a charcoal grill for a smoky edge. Keep the crema cold in the cooler.
