Cook's tip
Dress the lentils and bulgur while warm so they soak up the flavour. Add the crispy onions at the last minute so they stay crunchy. For a packed lunch, keep the dressing and onions separate. Sweet potato or pumpkin works well instead of butternut squash.
Cooking it at camp
Cook the lentils and bulgur at home and bring them chilled, and the salad is half done. Slice the squash into 2 cm rounds and grill over charcoal for 5–6 minutes per side for more smoky flavour than the oven. Fry the onions ahead and carry them in an airtight box.
