Cook's tip
Uneven shallot slices burn at the thin end, so cut them all the same thickness. Crispy shallots keep for a week in an airtight jar, so make extra. The key is not overloading the wok: too much rice steams instead of frying, which is why it goes in batches.
Cooking it at camp
Make the crispy shallots and spice paste at home and you only need to stir-fry at camp. On a weak burner, cook one portion at a time; a cast-iron pan over charcoal gives the best smoky flavour. Cook the prawns straight from the cooler.
