  1. Toast the fennel, cumin, coriander seeds, black and green cardamom, cloves, peppercorns and cinnamon in a dry pan over medium-low heat for , shaking the pan. 3. Raise the heat to medium-high heat. Salt the shank and marrow bones and sear them for , turning, until deep brown on all sides. 5. Add the water and the rest of the salt, bring to the boil over high heat for and skim. Cover and braise in the oven at 150 °C for , checking the level every hour and adding hot water if the meat is exposed. It is done when the meat splits along its grain at the touch of a spoon.

  6. Lift out the marrow bones, scoop the marrow back into the pot with a teaspoon and discard the bones. In a small pan, cook the flour in some of the ghee over medium-low heat for , until light brown and nutty, then whisk in a ladle of hot broth until smooth. Cook's tip

Ask the butcher to cut beef marrow bones into 5 cm lengths. Made a day ahead and chilled, the fat sets on top: lift it off and use it for the final drizzle, which improves both flavour and look. Lower the heat for the last few minutes of frying the onions so they don't burn.

Cooking it at camp

A Dutch oven over coals with more coals on the lid can replace the oven, but you must keep feeding coals for four hours to hold the heat steady. Make the masala and fried onions at home and check the liquid every hour.
