Cook's tip

The chips stay crisp for a day in an airtight box, so you can bake them ahead. Add chili flakes or sliced green chili for heat. For a crowd, serve the curry in a bowl with the chips alongside for dipping.

Cooking it at camp

Make the chips and curry at home; at camp just warm the curry in a small pot and spoon it over. Without an oven, fry the wrappers one by one in an oiled pan, turning once, until crisp. Keep the yoghurt and curry in the cooler.
