Cook's tip
Toasting the chickpea flour removes its raw, beany taste and makes the broth nuttier. The leftover shallot oil is fragrant and great on fried rice or tossed noodles. Let the frying oil cool completely before straining and storing it.
Cooking it at camp
Prepare the broth, shredded chicken, fried shallots and crispy noodles at home. At camp you only fry the paste and simmer, with no hot oil to handle. Keep the broth and chicken cold in the cooler.
