Papas Bravas a la Huancaína with Chorizo Crumble (Peruvian × Spanish)
Spanish tapas meets Peru: crunchy roast potatoes with huancaína sauce in place of the spicy tomato, topped with crisp chorizo.
Method
Preheat the oven to 220 °C. Cut the potatoes, skin on, into 3 cm chunks and put them in a 18 cm pot with cold water and the salt. Bring to the boil on high heat and boil for more, just until the outsides soften. Drain, return to the pot, cover and shake two or three times to rough up the edges, then let them steam dry for 5 minutes. Those rough edges are the secret to the crunch.

Cook's tip
Spread the potatoes out so they roast rather than steam; for 4 servings, use two trays if needed. Bacon is a good stand-in for chorizo.
Cooking it at camp
Make the sauce at home. At camp, fry the parboiled potatoes in a cast-iron pan with plenty of oil, turning them, and crisp the chorizo in one corner of the same pan.
