About servingsKeep children away while frying in hot oil and never leave the pan unattended. Cook minced meat until no pink remains, and bake until the egg is fully set and the centre no longer wobbles. Refrigerate leftovers and eat within 2 days.

Method

  1. Preheat the oven to 220 °C and line a baking tray with baking paper. Peel the plantains, slice them lengthwise 5 mm thick, brush both sides with 80% of the melted butter and spread them out without overlapping. Roasting instead of frying means less grease and a more even colour.

Cook's tip

The picadillo must be thick: any loose liquid stops the custard setting and the layers slide. You can leave out the raisins, but they balance the sweet plantain against the salty olives and capers.

Cooking it at camp

Roast the plantain and make the picadillo at home, pack them in the cooler and bring the custard mixed in a jar. At the campsite, line a Dutch oven with baking paper, build the layers and bake for 30–40 minutes with more coals on the lid than underneath so the top browns.
