Cook's tip
Freshly cooked rice turns mushy, so use cold rice. Got leftover roast pernil? Skip the pork step, chop it small and stir it in at the end for 1 minute. The soy sauce is a nod to arroz chino, Puerto Rico's own Chinese-style fried rice.
Cooking it at camp
Marinate the pork at home and pack it in the cooler, along with rice cooked and cooled in advance. With one burner and a wide cast-iron pan, cook garlic, then pork, then rice, and fry the eggs in a cleared corner of the same pan to save washing up.
