24-Hour Mojo Pernil with Pan Jus
Restaurant-style pernil: a day in orange, lime, garlic and coriander mojo, skin air-dried with salt and baking powder until glass-crisp, slow-roasted on onions with a rich pan jus.
Method
Pat the pork completely dry and score the skin in a tight 1 cm criss-cross, cutting through skin and fat but not into the meat. On the meat side, stab holes 3 cm deep and 3 cm apart with the tip of the knife.

Cook's tip
Air-drying uncovered in the fridge is the key to crisp skin; cover other foods if you are worried about smells. Leftover meat kept in its jus is perfect for sandwiches and fried rice.
Cooking it at camp
Bring the 24-hour-marinated pork in the cooler (below 5 °C) and roast it by indirect heat on a lidded grill at about 150 °C. Set it on onions and stock in a metal tray and you can make the jus too. Finish over the coals to crisp the skin, watching all the time.
