Old-School Pisto with Lacy Fried Egg

  2. Put the grated tomato, bay leaf, sugar and the salt into a 18 cm saucepan and reduce over medium-low heat for , until roughly halved and thick enough that a spoon drawn across the bottom leaves a trail for a moment. Let it cook while you do the vegetables.

Keep your face and arms back, as the oil spits. Toast the bread meanwhile.

Cook's tip

Cooking the vegetables separately matters because each needs a different time: all together, the courgette turns mushy before the peppers are soft. Keep the drained oil; it's full of flavour for the next batch. Pisto is best served warm rather than piping hot.

Cooking it at camp

At the campsite, cook the vegetables in turn in one pan, setting each aside on a plate, then bring everything back together with a can of crushed tomatoes. Only fry eggs in hot oil on a stable table, away from wind and children. At home, follow the steps above on the hob.
