Pisto manchego
La Mancha's slow-cooked Spanish vegetable stew: onion, peppers and courgette softened in olive oil, simmered down with tomato and topped with a fried egg.
Method
Cut the onion, peppers and courgette into even 1.5 cm dice so everything cooks at the same rate. Thinly slice the garlic. Halve the tomatoes, grate the cut sides on a box grater and throw away the skins.
Heat the olive oil in a 24 cm deep frying pan over medium heat, add the onion and garlic and cook for , stirring now and then, until the onion is soft and translucent but not browned.

Cook's tip
The secret is patience: low, slow cooking brings out the vegetables' sweetness. Out of tomato season, use the same weight of canned whole tomatoes, crushed. Pisto tastes even better the next day and keeps for 3 days in the fridge.
Cooking it at camp
It works perfectly in one deep pan on a camping stove. Chop the vegetables at home and pack them in a zip bag, and use canned crushed tomatoes instead of fresh. On a powerful burner, keep the flame at its lowest and stir more often.
