Cook's tip

Cranberry beans, cannellini or chickpeas all work. The smash keeps in the fridge for 2 days, so in the morning you only need to make toast. Ricotta or fresh mozzarella are good swaps for the feta.

Cooking it at camp

Make the bean and squash smash at home and keep it in the cooler; at camp, toast the bread and char the corn on a grill grate over the fire. Grilling whole cobs and slicing off the kernels works just as well.
