Porotos Granados
Chile's summer stew of fresh shelling beans and sweet squash, thickened with freshly grated corn and finished with torn basil.
Method
Shell the beans if they are fresh (frozen beans go in straight from the freezer). Husk the corn and grate the kernels on the large holes of a box grater into a bowl, keeping all the milky juice; this is the mazamorra that will thicken the stew. Peel the squash and cut half into 1 cm dice and the rest into 3 cm chunks. Finely chop the onion and mince the garlic.
Heat the oil in a 20 cm pot over medium heat. Cook the onion for , stirring now and then, until soft and translucent. Add the garlic, paprika and oregano and stir for just 1 minute, until fragrant and the oil turns red. Paprika burns quickly and turns bitter, so move on before it darkens.

Stir in the grated corn with all its juice and cook over low heat for , stirring constantly and scraping the bottom, until the stew is thick and creamy and the corn no longer tastes raw. Corn starch sticks and scorches easily, so don't walk away.

Cook's tip
No fresh cranberry beans? Use frozen ones, or for 4 servings 2 cans of cooked beans (drained), with half the water and only 15 minutes of simmering. Choose a dense, sweet squash such as butternut or kabocha. The stew thickens as it cools; loosen leftovers with a little water when reheating.
Cooking it at camp
One pot on a camp stove is all you need. Grate the corn and cut the vegetables at home and carry them in a cooler. Thin camping pots scorch easily, so use a wide, heavy-bottomed pot and keep the flame very low once the corn goes in.
