Cook's tip
Sour, well-fermented kimchi tastes best here. Squeezing out the juice and frying the kimchi dry keeps the tortilla crisp instead of soggy. For a vegetarian version, leave out the bacon and add 1 tsp toasted sesame oil when frying the kimchi.
Cooking it at camp
Fry the kimchi and bacon at home, cool them and pack them in a container; at the campsite you only need one burner and a pan to toast the quesadillas. Mix the crema ahead too and keep it in the cooler. A cast-iron pan toasts evenly even over coals.
