Churro Dessert Quesadillas
A café-style dessert: butter-crisped tortillas filled with vanilla cream cheese, strawberries and chocolate, then rolled in cinnamon sugar like churros.
Method
Mix the sugar and cinnamon on a wide plate. In a bowl, beat the softened cream cheese with the powdered sugar and vanilla until smooth. Melt the butter in the microwave for 20–30 seconds.

Hull the strawberries and slice them 5 mm thick; chop the filling chocolate into small pieces. Spread the cream cheese over one half of each tortilla, leaving a 1 cm border, top with strawberries and chocolate, and fold over.

For the chocolate dip, heat the cream in a 14 cm small pot over medium-low heat for , just until small bubbles appear at the edge. Take it off the heat, add the dip chocolate, wait 1 minute, then stir until smooth and glossy.

medium-low heatBrush a frying pan with a little melted butter and heat it over medium-low heat. Cook the quesadillas for per side, pressing gently with a spatula, until deep golden and crisp. Two fit in a 26 cm pan: 1 batch(es), about in total. Keep the heat moderate, because butter burns quickly.

medium-low heatWhile they are still hot, brush both sides with the remaining butter and press them into the cinnamon sugar so it sticks all over. Cut each into 3 wedges and serve right away with the chocolate dip.

Cook's tip
Take the cream cheese out 30 minutes ahead so it spreads without tearing the tortilla. Bananas or raspberries work well instead of strawberries. Coat in cinnamon sugar while hot, or it won't stick.
Cooking it at camp
Fill and fold the quesadillas and mix the cinnamon sugar at home, then keep them in the cooler; at the campsite you just toast and coat them. Make the chocolate dip in a small metal cup at the edge of the coals, stirring the cream and chocolate until melted.
