Creole Rajma Red Beans and Rice (Louisiana × Punjabi)
New Orleans red beans and rice, rajma's American cousin, built on smoked sausage and the celery-pepper-onion trinity and spiced with cumin, garam masala and ginger.

Cook's tip
Crushing the beans is the key: if it's thin, mash a few more and simmer uncovered for a few minutes. For a vegetarian version, skip the sausage and use vegetable stock with a little extra smoked paprika. It's even richer reheated the next day.
Cooking it at camp
Canned beans and ready-cooked smoked sausage make this ideal for camping. Chop the vegetables at home and pack them in a zip bag; with one pot, cook the stew first, then the rice. Keep the sausage and stock in the cooler.
