Cook's tip

Low heat and patience make the softest eggs: if they cook fast they turn dry and rubbery. Brioche or milk bread also works and makes it sweeter. Make extra scallion oil and keep it in the fridge for quick breakfasts all week.

Cooking it at camp

Easy on a camping stove with one frying pan: fry the scallions first, toast the bread in the oil, then scramble the eggs last. Keep the eggs and butter in the cooler and bring the bread in a bag so it does not get squashed.
