medium heatPlate, scatter generously with the garlic-peanut crumbs, tear over the basil and coriander leaves and serve at once.
Add in this stepBasil leaves 6 gCoriander (cilantro) 6 g
Cook's tip
Add the crumbs just before eating so they stay crunchy. If you don't like coriander, basil alone is plenty. Minced pork instead of chicken thighs gives a richer sauce.
Cooking it at camp
Toast the garlic-peanut crumbs at home and bring them in an airtight box. At camp, use less pasta water (about 1 L per person) and cook the chicken and tomatoes in one pan, then toss the pasta straight in to save on washing up. Keep the chicken in the cooler (below 5 °C).
