Cook's tip

Shan noodles are traditionally eaten as a tossed noodle dish with sips of broth alongside, but you can pour the broth over and eat it as soup. If your tomatoes are underripe, add a little more sugar to balance the acidity. The sauce keeps 3 days in the fridge.

Cooking it at camp

Make the tomato chicken sauce and garlic oil at home and carry them in the cooler (below 5 °C); at camp just reheat the sauce and cook the noodles. Soak the noodles in water for 30 minutes beforehand and they need only 1–2 minutes of boiling, which saves fuel.
