Cook's tip

Thigh meat stays juicy in a hot oven; breast works too, but check it a few minutes earlier. For more char, switch to the top grill for the last 2 minutes and watch closely. On a charcoal grill, cook over medium coals for about 12 minutes, turning often.

Cooking it at camp

Marinate the chicken at home in a sealed bag and keep it cold in the cooler. At camp, grill the skewers over medium charcoal, turning often, and check that the thickest piece is no longer pink. Make the chutney at home; it keeps for a day in the cooler.
