Cook's tip

A very hot pan and dry meat are the keys: wet or crowded lamb steams and turns grey. Lamb mince works too, browned the same way. The pickled onions keep for a week in a jar in the fridge.

Cooking it at camp

A great one-burner camp meal: cook the rice first and keep it covered, wrapped in a towel, then sear the lamb in the same pot or a pan. Bring the pickled onions and dill yogurt ready-made in jars in the cooler, and keep the raw lamb well chilled.
