Cook's tip

Dress the salad just before serving so the lettuce stays crisp. Pita crisps keep for 3 days in an airtight tin, so bake extra for snacking. Leftover shish tawook skewers work perfectly here too.

Cooking it at camp

Make the pita crisps and dressing at home and carry the marinated chicken in the cooler. At the campsite, simply grill the chicken over charcoal or in a grill pan on the burner and toss it with the salad.
