Charcoal Shish Tawook with Sumac Onions
Restaurant-style shish tawook: chicken thigh marinated overnight in Greek yoghurt and a homemade seven-spice blend, charcoal-grilled and basted with lemon butter, with classic toum and sumac onions.

Combine the Greek yoghurt, most of the lemon juice, grated garlic, tomato paste, the spices, most of the salt and the olive oil, rub it thoroughly into the chicken and refrigerate for (overnight).

Make the toum the classic way: blend the de-germed garlic and salt to a fine paste in a food processor, then, with the motor running, drip in the oil a tablespoon at a time, very slowly, adding a little lemon juice and ice water alternately after each quarter of the oil. Keep emulsifying for . Patience is everything; it is ready when snow-white and thick enough for a spoon to stand up in it.

Cook's tip
No charcoal? Use the oven grill (broiler) on the top shelf for the same time, turning halfway. Make extra seven-spice and keep it in a sealed jar for up to 3 months for other dishes. If the toum splits, blend 2 fresh garlic cloves and slowly add the split sauce back in.
Cooking it at camp
Bring the overnight-marinated chicken, toum and sumac onions from home in the cooler; at the campsite you only grill. Keep the lemon butter in a small cast-iron pot at the edge of the grate.
