Cook's tip
Curry pastes vary a lot in heat and saltiness, so start with half and add more to taste. Thinly sliced chicken breast or tofu can replace the shrimp. The noodles absorb broth as it sits, so add a little stock when reheating.
Cooking it at camp
A one-pot camp noodle soup. Small cartons of coconut milk and a stock cube keep the pack light, and shrimp packed frozen in the cooler will be just thawed by the time you cook. Cook it on the first day.
