Cook's tip
Timing is everything with dried chiles: once they smoke, it's too late, so pull them out the moment they smell toasty. Freeze any spare stock for the next soup.
Cooking it at camp
Make the stock and chile purée at home and carry them in an insulated container; at camp just toast the fideo and simmer, and it is ready in 15 minutes. Fry the crispy ancho ahead too and pack it in an airtight tub.
