Soto Ayam Ramen

Indonesia meets Japan: fresh ramen in turmeric-lemongrass chicken broth softened with coconut milk, topped with crisp-skinned chicken and soy-marinated soft eggs.

About servingsThe yolks of the soft eggs are runny; for young children, pregnant women, older people or anyone with a weakened immune system, boil them for at least 9 minutes until set. Eat marinated eggs within 3 days, kept in the fridge.

Method

  1. Bring a 14 cm pot of water to a rolling boil over high heat, lower in the eggs straight from the fridge with a spoon and boil for exactly . Plunge them straight into iced water for 5 minutes, then peel. Mix the soy sauce, mirin and water in a zip bag, add the eggs, press out the air and marinate in the fridge for . Short on time, even 30 minutes helps.

  2. Roughly chop the shallots, garlic and ginger and blend with the turmeric, coriander and 2 tablespoons of water to a smooth paste.

  3. Heat the oil in a 20 cm pot and fry the paste over medium heat for , until the moisture has cooked off and it smells toasty. Add the bashed and knotted lemongrass and the lime leaves and fry for 30 seconds more.

  4. Add the stock and chicken, bring to a simmer, then turn to medium-low heat, cover and cook for . The chicken is done when the thickest part shows no pink and the juices run clear (75 °C in the centre).

  5. Lift out the chicken and pat it dry. Lay it skin side down in a dry 24 cm non-stick pan and fry over medium-high heat for , until the skin is crisp and brown. Slice 1 cm thick.

  6. Remove the lemongrass and leaves from the broth, add the coconut milk and soy sauce and heat over low heat for . Keep it just below a boil; boiling makes coconut milk split. Season with salt: ramen broth should taste slightly too salty to sip on its own.

  7. Bring a large 24 cm pot of water to the boil over high heat, shake the noodles loose into it and cook for . For the last 30 seconds, blanch the bean sprouts in a sieve in the same water. Warm the bowls with hot water and drain the noodles very well.

  8. Pour the broth into the warm bowls, add the noodles and straighten them with chopsticks. Top with the chicken, sprouts, halved eggs, sweetcorn and sliced spring onions, scatter with fried shallots and serve with lime wedges to squeeze over.

Cook's tip

With dried noodles, cook them 30 seconds less than the packet says so they do not go soft in the broth. For heat, stir 1 teaspoon of sambal oelek into the broth or add a few drops of chili oil.

Cooking it at camp

Make the soft eggs and spice paste at home and bring them in the cooler. At the campsite, simmer the broth on one burner and cook the noodles on another. You can skip crisping the chicken skin and use it straight from the broth.
