Add in this stepHot steamed rice 300 gCelery leaves, chopped 2 tbspCrispy fried shallots 2 tbspLime 1Sambal oelek (chili paste) 2 tsp
Cook's tip
No galangal: use a little extra ginger. Macadamia nuts stand in well for candlenuts. The broth tastes even better the next day, so it can be made ahead; cool leftovers quickly and keep them in the fridge for up to 3 days.
Cooking it at camp
Fry the spice paste at home and bring it in a jar; at the campsite just simmer the chicken, water and paste in one pot. Boneless thighs cook in about 20 minutes. Keep the chicken in the cooler at 4 °C or below.
