Cook's tip

Waxy or all-purpose baby potatoes hold together best when smashed. Use 1 tbsp of the rendered pork fat instead of some of the oil for extra flavour. The crumble stays crisp for about an hour, so you can make it first.

Cooking it at camp

Boil and smash the potatoes, then fry them in a cast-iron pan in the pork fat over a burner or grill, turning once, until both sides are crisp. Bring the parsley cream ready-made in the cooler.
