Oven-Crisp Stegt Flæsk with Emerald Parsley Sauce
Dry-brined pork belly roasted on a rack until glass-crisp and evenly golden, with a vivid green parsley sauce enriched with cream, mustard and lemon, and butter-glossed new potatoes.
Method
Pat the pork slices dry, lay them on a wire rack in a single layer and sprinkle both sides evenly with salt. Leave uncovered in the fridge for . The salt draws out moisture and dries the surface, so the pork roasts much crisper.

Cook's tip
Roasting on a rack lets the fat drip away, so the slices crisp evenly without any spitting. Stir 1 tbsp of the pork fat from the tray into the sauce for extra depth. The sauce loses its colour if it waits, so add the purée just before serving.
Cooking it at camp
Dry-brine the pork at home. At camp, cook it over indirect heat on a lidded grill, or slowly in a cast-iron pan. No blender? Chop all the parsley very finely and stir it in instead.
