Gochujang Chicken Stroganoff
A Korean-Brazilian rice bowl: chicken thigh simmered in a gently spicy-sweet cream sauce where Korean gochujang joins the ketchup, topped with spring onion, sesame and potato sticks.

Wash the rice and put it in a 16 cm pot with the water. Boil over high heat for , then cover and cook over low heat for .

high heat→low heatCut the chicken into 2 cm pieces and season with salt. Heat the oil in a 24 cm pan and fry the chicken over medium-high heat for until golden. If it has skin, start skin-side down to render the fat.

medium-high heatAdd the sliced onion, garlic and thinly sliced mushrooms and fry over medium heat for until the onion is translucent.

medium heatStir the gochujang, ketchup, soy sauce and honey into the water, pour it in and simmer over medium-low heat for . Stir now and then so it does not catch, and cut the biggest piece of chicken to check it is white all the way through.

medium-low heatAdd the cream and warm over low heat for until the sauce is smooth and a soft orange, then turn off the heat. Spoon generously over the rice and scatter with sliced spring onion, sesame seeds and potato sticks.

Cook's tip
Gochujang varies a lot in heat and sweetness, so start with less and add more after tasting. For children who do not like spice, halve the gochujang and add the same amount of extra ketchup.
Cooking it at camp
Mix the gochujang, ketchup, soy sauce, honey and water in a jar at home, then just pour it in at the campsite. With one burner, cook the rice first and wrap the pot in a towel. Shelf-stable UHT cream is handy.
