Stroganoff-Loaded Baked Potatoes
Café-style jacket potatoes: crisp-skinned, fluffy baked potatoes split and filled with a thick chicken stroganoff, gratinated with cheese and finished with crunchy potato sticks.
Method
Preheat the oven to 200 °C. Scrub the potatoes, dry them and prick each 4 or 5 times with a fork. Rub with olive oil and sprinkle with coarse salt. Bake directly on the oven rack in the oven for . They are done when a skewer slides into the centre with no resistance.

ovenMake the filling while the potatoes bake. Cut the chicken into 1.5 cm cubes and season with salt. Melt the butter in a 22 cm pan and fry the chicken over medium-high heat for until golden on the outside.

medium-high heatAdd the finely chopped onion and thinly sliced mushrooms and fry over medium heat for until the onion is translucent.

medium heatAdd the ketchup, mustard and cream and simmer over medium-low heat for , stirring, until thick. It should be thicker than a classic stroganoff: a line drawn across the pan with a spatula stays open for a moment. Check the chicken is white all the way through.

medium-low heatPut the baked potatoes on a baking tray, cut a deep slit along the top and squeeze the ends to open them. Fluff the inside with a fork and add a pinch of salt. Fill generously with stroganoff, top with cheese and return to the oven at 220 °C for , until the cheese bubbles and browns in spots.

ovenJust before serving, top with potato sticks and snipped chives. The potatoes are very hot, so let them cool for a minute or two.

Cook's tip
Do not wrap the potatoes in foil, or the skin will go soft; baked bare, they are crisp outside and fluffy inside. Short on time? Part-cook the potatoes in the microwave first, then they need only about 20 minutes in the oven.
Cooking it at camp
Wrap each potato in two layers of foil and bury it in the ashes at the edge of the fire for 40 to 60 minutes, turning once. Make the filling on the burner, spoon it into the split potatoes and melt the cheese under a lid or in a Dutch oven.
