Sweet and Sour Pork Katsu Sando
A thick pork katsu brushed with tangy sweet and sour glaze, stacked with charred pineapple and crisp cabbage in toasted white bread and pressed for a picture-perfect cross-section.
Method
Shred the cabbage as finely as you can, soak in cold water for 5 minutes, then drain and dry completely. Mix the ketchup, sugar, vinegar, soy sauce and water in a small saucepan for the glaze.

Cut through the strip of sinew between fat and meat every 2 cm with the tip of a knife so the pork stays flat, then pound it to 1 cm thick with a meat mallet or the back of a knife. Season with salt and pepper, coat in flour, then beaten egg, then panko, pressing the crumbs on firmly with your palm.

Pour oil 1 cm deep into a 26 cm pan (×2 means fry in two rounds) and heat over medium heat for to 170°C: a crumb dropped in should sizzle and float straight away. Lay the pork in away from you and fry per side until both sides are golden. Stand on a rack for 3 minutes; the carryover heat finishes the center (63°C inside if you have a thermometer).

medium heatReduce the glaze in the 14 cm saucepan over medium-low heat for until it coats a spoon thickly, then turn off the heat. Brush it over both sides of the katsu.

medium heatSpread mayonnaise on the toasted sides, then layer cabbage, katsu, pineapple and more cabbage and close the sandwich. Wrap tightly in plastic wrap, press under a plate for 3 minutes, trim the crusts and cut in half to show the cross-section.

Cook's tip
Brush on the glaze just before assembling so the crust stays crisper. Pounded chicken breast works instead of pork. For a clean cut, warm a bread knife in hot water, wipe it dry and use long sawing strokes.
Cooking it at camp
Shallow-frying in 1 cm of oil is easy on a camp burner, but set up a windscreen so the oil does not spatter. Toast the bread on a grill rack over the coals for extra flavor. Wrapped sandos travel well, so they make a great trail lunch.
