Hong Kong-style sweet and sour pork: yolk-marinated shoulder, double-coated for a craggy crust, fried twice and glazed in a plum and Worcestershire sauce.
Method

Cook's tip
The yolk marinade keeps the pork tender and helps the starch cling. Do not fry right after coating; wait until the starch looks damp so the crust does not fall off. No plum sauce? Use 1 tsp apricot jam.
Cooking it at camp
At camp skip the deep-frying: shallow-fry the double-coated pork in 1.5 cm of oil in a pan over medium heat, turning, for 6 to 7 minutes until cooked through, then toss in the sauce. Keep the burner on flat ground and never leave the pan of oil.
