Tandoori Chicken Tray Pizza with Mint Raita Drizzle
Indian meets Italian: spiced-yogurt chicken with a smoky sear and mozzarella on a crisp tray pizza, finished with a cool mint-yogurt drizzle.
Method
Cut the chicken into 2 cm pieces. In a bowl mix the yogurt, chilli powder, garam masala, cumin, finely grated garlic and ginger, lemon juice, salt and part of the oil, toss in the chicken and refrigerate for . Take the dough out of the fridge now so it comes to room temperature.
Add in this stepBoneless chicken thighs 240 gGreek yogurt (for the marinade) 80 gKashmiri chilli powder 1 tspGaram masala ¾ tspGround cumin ½ tspGarlic cloves 2Fresh ginger 5 gLemon juice 1 tbspSalt ½ tspVegetable oil ½ tbsp
Put a shelf on the second-lowest level and preheat the oven (oven) to 250 °C for . Pizza needs a short, very hot bake for a crisp base.
ovenHeat part of the oil in a 24 cm pan on medium-high heat and spread out the chicken. Cook for without stirring too often so it gets charred spots, until it is white all the way through and reaches 75 °C. Don't crowd the pan, or the chicken steams instead of browning.
Add in this stepVegetable oil 0.6 tbsp
medium-high heatBrush a 35×25 cm baking tray with the remaining oil, add the dough and press it out to the corners with your fingertips; if it keeps shrinking back, let it rest 5 minutes and try again. Rub the kasuri methi into the passata and spread it thinly, leaving a 1 cm border.
Add in this stepPizza dough (shop-bought or homemade) 340 gTomato passata 110 mlKasuri methi ½ tspVegetable oil ½ tbsp
Scatter over the mozzarella, then the chicken, thinly sliced red onion, bite-size pieces of pepper and sliced green chilli. Don't overload it or the middle turns soggy.
Add in this stepGrated mozzarella 140 gRed onion ½Bell pepper ½Green chilli 1
Bake (oven) for , until the edges are deep golden, the cheese is bubbling and the underside is browned when you lift a corner. With two trays, bake them one at a time (1×).
ovenMeanwhile chop the mint finely and stir it into the plain yogurt (thin with a little water if thick). Drizzle it over the hot pizza, scatter with coriander, slice and serve.
Add in this stepFresh coriander (cilantro) 5 gMint leaves 8 gPlain yogurt (for the drizzle) 70 g
Cook's tip
Cooking the chicken fully in the pan first keeps it safe in the short bake and gives the charred, tandoor-like flavour. For a quicker version use naan or flour tortillas as the base; the bake time roughly halves.
Cooking it at camp
Heat a cast-iron pan or pizza stone in a lidded grill for 15 minutes, add the dough, close the lid and bake for 8–10 minutes. Marinate the chicken at home and bring it in an iced cooler; if the base scorches, move the pan to the indirect side.
